Mediterranean Pasta Casserole

This Mediterranean Pasta Casserole turns our Mediterranean seasoning mix into a creamy, comforting baked dish packed with chicken, spinach, and artichokes.

Ingredients

  • 1 packet Mad Dash Mediterranean Seasoning Mix

  • 1 cup half and half

  • 4 oz cream cheese

  • 1 can artichoke hearts, chopped

  • 1 cup fresh spinach, chopped

  • ½ cup shredded mozzarella cheese

  • 2 cups canned or rotisserie chicken

  • Cooked pasta

  • ½ cup feta cheese (for topping)

Instructions

  1. Preheat oven to 350°F.

  2. In a small saucepan, combine half and half, cream cheese, and Mediterranean seasoning. Heat over medium until smooth and lightly simmering.

  3. Cook pasta according to package directions and set aside.

  4. In a large bowl, combine pasta, artichokes, spinach, mozzarella, and chicken. Stir in the sauce mixture.

  5. Pour into a 9×13 casserole dish and top with feta cheese.

  6. Cover and bake for about 30 minutes, or until heated through.
