Spinach Artichoke Chicken Bake

This creamy Spinach Artichoke Chicken Bake turns our Spinach Artichoke Dip Mix into a rich, comforting dinner that’s surprisingly easy to make.

Ingredients

  • 1 package Mad Dash Spinach Artichoke Dip Mix

  • 1 block cream cheese

  • 1 cup mayonnaise

  • 1 can artichokes, drained and chopped

  • ½–1 cup shredded Parmesan cheese

  • 3–4 chicken breasts

  • ¼ cup half and half

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. Prepare the dip by mixing the dip mix with cream cheese, mayonnaise, artichokes, and Parmesan cheese. Do not bake the dip.

  3. Slice chicken breasts in half lengthwise to create thinner pieces.

  4. Spread spinach artichoke dip over each chicken piece and roll like a pinwheel.

  5. Place rolled chicken side-by-side in a 9x13 baking dish.

  6. Stir ¼ cup half and half into any remaining dip and spread it in the dish around the chicken.

  7. Season with salt and pepper and sprinkle with additional Parmesan cheese.

  8. Cover with foil and bake for about 40 minutes, or until chicken reaches 165°F.

Serve warm and enjoy this creamy, flavorful twist on a classic dip.
